I would have though Evie should have been dry at night by now. You said you take her out last thing at night to do a wee - does she always go - sometimes I take Maggie out and have to hang around for a while before she goes and sometimes if you wait a bit longer she will do a poo too. It may be there is some scent of wee in your house still - even if you clean it up it can still have a scent where it's been - especially on a carpet. You can buy pet sprays which help get rid of it. Other than that you could try getting up twice a night and take her out to do a pee - I think you just need to break the habit. Good luck.
Elsa's first night was tiring - she didn't cry but kept waking up and after I put her on the paper for a wee she didn't want to go back to bed. I think I will have to try a crate tonight. I was able to leave her in the crate in the kitchen this morning while I took Maggie out. She did cry but by the time I got my boots on she had stopped and fallen asleep. She has been pretty good with wees - only a few accidents but I have been vigilant. I will be glad when she grows a bit though as at the moment she is getting through the trellis which separates the bottom from the top garden and then it is harder to keep an eye on her. I am amazed at what she can get under, over or through!
