I agree Karen - i have two ski jackets also - one is my designated 'dog coat' and always has a supply of poo bags in the inside pocket. However i have found that the ski jackets take quite a long time to dry if you get caught in an absolute downpour so i am hoping my new wax jacket will dry quicker.
As for keeping your legs dry - my parents use those single layer waterproof trousers over normal trousers but i prefer a pair of lightweight ski salopettes worn on their own (or with base layer trousers in the deep winter). Everyone prefers different things though and i think it's a case of finding what suits you :)
